Cutting boards: wood vs plastic

What the research says about the humble kitchen surface you use every day

Most kitchens have a plastic cutting board somewhere. It is cheap, dishwasher-safe, and easy to replace when it gets stained. For decades that felt like the sensible choice.

Then researchers started looking at what actually comes off the board when you use it.

What the science actually found

In 2023, a group of researchers ran a careful experiment. They took new polypropylene cutting boards, prepared vegetables on them the way a normal home cook would, and then measured what came off the surface [1].

The number surprised them. A single household using a plastic board regularly can release somewhere between roughly 7 million and 50 million microplastic particles per year, depending on the board material and how much chopping happens [1]. That is per person, per board.

To put it in perspective, that is more particles than most other everyday sources they had measured up to that point.

A separate 2022 study looked at the food itself. When chicken and fish were prepared on plastic boards, researchers were able to detect plastic fragments transferred onto the meat [2]. The board was not just shedding into the air or the sink. It was shedding into dinner.

Does it actually reach the gut?

This is a fair question to ask. Just because particles come off a board does not automatically mean they cause a problem.

In 2025, a follow-up study tried to answer that. Researchers simulated what happens when the particles released from cutting boards reach the digestive tract of mice. They saw signs of intestinal inflammation and shifts in the gut microbiome [3]. Mice are not humans, and one study is not proof. But it does suggest that the particles leaving the board are biologically active once they get inside.

The direction of evidence is consistent. Cutting on plastic sheds particles. Those particles end up on food. Food ends up in the gut. The gut appears to respond.

So what about wood and bamboo?

Wood and bamboo boards do wear down. They also shed. The difference is what they shed: mostly cellulose fibers, which are biological and biodegradable, not synthetic polymer.

There is a second, more interesting layer here. Certain hardwoods, and to some extent bamboo, have long been observed to have natural antimicrobial properties. Bacteria placed on a wooden surface tend to die off faster than on a plastic one, likely because of the wood's structure and its natural compounds. This is why traditional butcher blocks are wood, not plastic.

That does not mean wood is magic. A wooden board still needs to be kept dry, oiled, and cleaned properly. A deeply grooved, wet wooden board can absolutely harbor bacteria. Care matters more than material.

But the trade-off is worth naming clearly. A well-maintained wood or bamboo board sheds cellulose and, in many cases, resists bacteria better than plastic. A plastic board sheds microplastics that can transfer to your food and appear to affect the gut in early studies.

Small choice, real difference

Cutting boards are one of those quiet exposures. You are not thinking about them. You are thinking about dinner. But you use the board every single day, often for years, and every knife stroke removes a tiny amount of material.

If you are already replacing an old, scored plastic board, this is a reasonable moment to switch. Wood and bamboo are the most researched alternatives. Look for boards made from a single piece rather than glued composites, and keep them dry between uses.

You do not need to throw out a plastic board tonight in a panic. The point is not fear. The point is that this is one of the easier swaps in the kitchen, alongside choosing a glass or stainless container over a plastic one, or letting hot food cool before storing it in plastic (see What happens when food and drinks are heated in plastic)).
